`Jakkalsfontein` Shiraz

Fairview is situated on the lower slopes of Mount Paarl, which is more...

sheltered from the moderating maritime influence than nearby Stellenbosch. Vines were planted here as early as 1699. The property was bought by the grandfather of current owner Charles Back in 1937. Fairview has a reputation for consistent quality across a range of innovative styles, using both classic and unusual varietie, and leads the field in South Africa in matching varieties to specific sites. The Fairview estate now has a total of 680 hectares of vineyard over four appellations: Paarl (350 hectares), Swartland (155 hectares), Darling (140 hectares) and Stellenbosch (35 hectares). This vineyard ownership in so many different regions allows Charles to produce a wide range of wines, from grapes grown in optimal conditions. In 2014, Charles received a lifetime achievement award from the International Wine Challenge.

The Jakkalsfontein vineyard was planted in Malmesbury, Swartland in 1997. Dry-farmed bush vines grow in deep weathered shale soils. These soils retain moisture well which is much needed in the latter part of the hot dry summers normally experienced in the Swartland area.

The fruit was hand-picked ripe at 25° Balling and hand sorted before fermentation. The grapes were then gently crushed and fermented in two different ways. The largest portion of the blend was fermented in 500 litre open top wooden barrels. The wine was punched down several times a day to get optimum flavour and colour extraction. After 10 days maceration and fermentation, the wine was basket pressed and allowed to complete malolactic fermentation in 225 litre French barrels. The other parcel was fermented in stainless steel tanks, pressed and aged in French oak barrels (30% new oak) for 20 months, with racking at regular intervals. The two parcels of wine were then blended to create the final product.

Tasting Notes

Lavender and fennel aromas interspersed with notes of sweet spice make for an attractive nose. The palate reveals dark, ripe fruit and smooth tannins, with well-integrated oak and a lingering finish.
