hairdresser when she asked a customer, who happened to be the wife of wine writer Jeremy Oliver, if she knew of any wineries where she could do work experience. The Olivers recommended Burgundy, which has since been an inextricable part of Jane’s life. She went on to gain experience working with Cullen in the Margaret River, Felton Road and Ata Rangi in New Zealand and Ernie Loosen in the Mosel. She finally moved to Burgundy in 2004, and started working at Domaine des Comtes Lafon. Since then, Jane has developed her own micro-négociant and rents a space in a small winery in Bligny-lès-Beaune which she shares with Dominique Lafon.
The Savigny-lès-Beaune 1er cru Aux Vergelesses (commonly called Savigny Vergelesses) is one of the best 1er crus from Savigny-lès-Beaune. Facing the Mont Blanc in the east it is above the Ile de Vergelesses, a 1er cru vineyard of Pernand Vergelesses. The vineyard is on a fairly steep slope, well-drained and the soil is argilo calcareous marl. Vines for the 'Savigny Vergelesses' are between 25 and 50 years old.
What had promised to be a very generous vintage, turned out to be an extremely difficult year for Burgundy, with terrible bouts of hail, frost and mildew. Yields were very low due to the complicated weather patterns throughout the year. The harvest ended on a high note with a warm, dry and sunny July through to October. This spell of consistently good weather salvaged the vintage.
Time in the vineyard and a minimum intervention approach in the winery is the hallmark of Jane Eyre’s winemaking style. Small parcels of low yielding fruit were 100% handpicked and destemmed. Indigenous yeast fermentation took place in stainless steel tanks where a combination of gentle pump overs and punchdowns were employed as needed. The wine was matured in 100% French oak barriques for 12 months and then spent 2 months in tank before bottling, unfined and unfiltered.
The Vergelesses vineyard produces wines which are very perfumed. The 2016 vintage is ageing well, with a bouquet of red cherries and raspberries. The tannins have an earthy edge and this structure will allow the fruit to continue to develop in the bottle.
