Chile and Argentina. In the same way, Montes, the Chilean winery, crossed the Andes to set up in Mendoza. Their vineyards are situated in the heart of Mendoza and further to the south in Valle de Uco, where many of the premium producers are now sourcing their fruit. The focus is primarily on Malbec and Cabernet Sauvignon, a variety that has been somewhat forgotten as Malbec has surfed one wave of success after another in the past decade. As a result, there are many old vineyards in Mendoza that produce excellent fruit. Kaiken's own vineyards supply 70% of their production requirements and 30% is from vineyards that they control.
Grapes are sourced from the Gualtallary area of the Valle de Uco at an altitude of 1,200 metres above sea level. Here, soils are sandy loam, providing ideal conditions for growing Chardonnay. Plants are trained to the vertical shoot positioning system and yield an average of six tonnes per hectare.
The 2014-2015 harvest (from November to February) was a very cool vintage well below historic averages. Only in March did temperatures approach warm up close to annual averages. Due to the cold, slow ripening occurred yielding very expressive wines. Red varieties were marked by slow ripening until late March, especially with regards to sugar content. Then, halfway through April ripening suddenly accelerated, which allowed fruit to reach full maturity at a good point in the season avoiding disease threats.
Grapes were all hand harvested into small, 10kg bins and manually sorted before the winemaking process. Once picked, a third of the fruit underwent pre-fermentative maceration for six hours at 8°C. Alcoholic fermentation lasted for 20 to 30 days at temperatures ranging between 10-13°C. A third of the finished wine was then transferred to French oak for barrel ageing for 12 months.
Gold in colour with a hint of green. Aromas of pineapple, white peach and delicately intertwined with mineral notes and aromas from the oak ageing. The palate is rich and supple with beautiful balance and a long, fresh finish.
