David Moret makes top quality white Burgundy from his small cellar in Beaune....

David studied winemaking at school, but didn't have a family domaine to work in when he graduated, so he began his career in wine by selling winery equipment to local vignerons. His personable character ensured success in this endeavour, as well as friendships with some of the top growers of the Côte de Beaune. He purchased his first barrels in the late 1990s, and since then, has continued to buy small parcels of grapes from top growers to vinify in his cellar, always from the same plots of vines.

Vineyards

Puligny-Montrachet is devoted almost exclusively to the production of Chardonnay. Soils here are generally extremely thin with good levels of limestone, producing wines that are elegant and appealing. At 16 hectares, 'Les Folatières' is the largest Premier Cru in Puligny and shares a similar altitude and soil composition as Grand Cru Chevalier Montrachet.

Vintage Information

In 2017, Bourgogne enjoyed a return to average yields. Some areas were impacted by spring frosts which reduced yields slightly but generally the vines’ growth cycle benefitted from an earlier than usual budburst in early April followed by a very warm summer interspersed with a few very hot spells of weather as well as more mixed conditions. Generally ripening progressed at a good pace with the first grapes being harvested across the region two weeks ahead of average.

Vinification

Grapes were brought straight to the winery and pressed immediately, to preserve the precious aromas and flavours. Using naturally occurring yeasts, the wine underwent alcoholic and malolactic fermentation in French oak barrels. It was then aged for 12 months in oak, of which 40% was new, before bottling. It remained in cellars for several months.

Tasting Notes

This is a superb Premier Cru, supremely fine and elegant with wonderful minerality and fruit aromas. The palate is creamy, with lovely acidity and great fruit intensity on the long finish.
